Sizzling Seitan On The Grill

Seitan: sounds evil. Wheat gluten: sounds...gross. But actually, wheat gluten, better known as "seitan" is a wonderful, vegan ingredient that with a great chewy texture that acts as a meat substitute. Like tofu, seitan absorbs the flavors that you cook it in, and can be cooked without marinading for very long. Seitan has tons of vegetable protein and is low in fat and carbohydrates. The best tip to be offered about seitan is to buy it locally. Ray's Seitan (nicknamed "wheat meat") is made in Philadelphia, Pennsylvania, and you can buy it at natural food stores like Whole Foods.
Here's a simple bbq seitan recipe.
You'll need a grill. And:
-1 package of seitan, broken into big pieces (you should try and get 4 big pieces out of one 12-oz container; of course, small pieces will break off. cook 'em too. but cook them on tin foil so they don't fall through the grill)
-1 bell pepper, sliced in strips
-1 small onion, sliced in strips
- few tablespoons of soy sauce
BBQ sauce (you will have some extra)
- 1 cup of tomato ketchup
- 2 tablespoons of molasses (if you use blackstrap molasses, you may need to use more sweetener)
- 1 tablespoon of agave or honey
- 2 tsp garlic
- 1 tablespoon of Grill Mates bbq seasoning
- dash of hot sauce
- 1 tablespoon of crushed red pepper flakes
- 1/2 cup vegetable oil
Please feel free to add more spices to taste! Everybody likes their bbq sauce a bit different.
How to:
So, put the pieces of seitan in a bowl and sprinkle the soy sauce over it. The seitan will absorb the soy sauce and it'll become a bit salty, creating a nice contrast with the sweetness of the bbq sauce. Put the seitan right on the grill, and brush vegetable oil over it. Next, put the pepper and onion on a piece (or two) of tin foil and place on the grill. Brush the seitan with some of the bbq sauce. Let it cook for a few minutes and then flip it, cooking the other side the same way. Once that side is done, the veggies should be done, too. Mix the seitan and veggies in a bowl. Add the remaining bbq sauce. Enjoy! Yields 3-4 servings.
